Spring White Asparagus

White asparagus are the same vegetable as the familiar green variety, we know so well in the USA. in Europe, white asparagus are more sought after because of the sweet, buttery taste. In order to produce white asparagus, the shoots are covered so they do not receive sunlight and therefore do not produce chlorophyll. Chlorophyll is the natural substance responsible for the usual green color. White asparagus may have slightly less nutrients, but overall they are a healthful choice containing vitamin C, fiber and B vitamins. Do peel the outside stems of the whites as they tend to be tougher than the greens. Steam for 5 to 10 minutes depending on the thickness. In spring, these are my favorite vegetables to compliment or showcase any meal.
