For decades, Americans looked to the traditional diets of people living around the Mediterranean as a model for healthy living—maybe not following that model but definitely chattering about it in books and media coverage. Lieberman, who spent two years living in Geneva, writes that there are plenty of lessons to be learned from other countries in Europe. Switzerland, Italy and France have some of the longest average life spans in the world, as well as low rates of obesity, heart disease and other markers of ill health. The book examines each country one by one and lays out the government’s official dietary recommendations, akin to the U.S. food pyramid, along with detailed descriptions of a typical day in the eating life of its citizens. Much of Lieberman’s background and advice will be familiar to anyone paying attention to the news: Americans are fat and getting fatter; we’re among the fattest people in the world; we eat a diet far too high in processed foods, sugar and fat; we snack too much and generally consume far too many calories. But Lieberman’s descriptions of the daily eating habits of her chosen European countries are downright inspiring: Lives marked by pleasurable outdoor exercise; a focus on local, organic foods so satisfying that they discourage overindulgence; regular leisurely sit-down meals that trump Americans’ predilection for on-the-go snacking; and, of course, daily indulgences in delicate portions (a square of good dark chocolate, a scoop of gelato, a single biscotto alongside a cup of coffee). It all sounds too romantic to be true, but Lieberman has lived it and brings an infectious enthusiasm to her writing. She concludes each chapter with a list of actionable tips for a European makeover of stateside eating habits and concludes the book with 70 pages of simple recipes, heavy on the whole grains, veggies and lean meats.

Beyond The Mediterranean Diet is divided into three sections. The first outlines the lifestyle and dietary practices the author observed in Switzerland, Italy and France—three countries with impressive health statistics—during her two years as an expatriate in Europe. This section review show cultural foods, such as chocolate, pasta, and cheese, can be woven into a healthful eating plan. It was interesting to learn about each culture’s food preferences, its national dietary guidelines, and myths and facts surrounding each nation’s food culture.
In the second section, the reader learns how to apply the Swiss, Italian,and French dietary practices to life in the United States. Particular emphasis is placed on portion size. The reader is encouraged to follow Europeans’ lead and use “Super-Healthy Plates,” or dishes that are 9inches in diameter, as well as smaller utensils.
I particularly enjoyed the segment that out-lines principles that encourage Americans to change the way they view food and mealtime to reflect a more European perspective. This includes paying more attention to hunger cues, turning off electronics and instead socializing during mealtime, and going for a walk before and after dinner. It’s simple advice,but the tips reinforce the idea that food is meant to be enjoyed. Additional advice for food shopping and dining out also is provided, with an emphasis on turning to whole foods and purchasing local, seasonal foods when possible.
The last section is dedicated to Mediterranean-inspired recipes that are relatively simple, unintimidating and made with wholesome ingredients. I loved creating and tasting the Bircher Muesli and the Lentils, RoastedBeets, and Tabouleh Over Arugula.
I truly enjoyed this book. It not only advocates for RDs but also promotes sustainable habits, overall well-being, and the importance of enjoying good food.

Written beautifully with stunning photography, Layne teaches us really do able things we can right here in the good old USA so we may too strive for the excellent health stats of Italy, France and Switzerland! Her book are not mere words, but words to get us into action with her helpful step by step instructions. Many facets of Layne’s argument for dietary change were completely unknown to me. Reading, I picked up a few ideas about how cultural differences could effect eating habits. One example being, the fact that europeans spend less time snacking, and more time socializing. This idea resonated with me and opened my eyes to the dangers lurking behind the comfortable-sounding habit of “casual snacking.”
Beyond the Mediterranean Diet was more than a cook book, it was an exploration of cultural and culinary differences. As a health conscience individual, I recommend this book as a trustworthy guide to healthier living.

The advice provided by Lieberman falls in accordance with my that given to me by my own mother. The difference is, Layne supports her arguments with facts and reputable knowledge, while my mother simply pokes me with until fork until she’s convinced I’m listening.
Lieberman’s book ‘Beyond the Mediterranean Diet’ didn’t offer advice I couldn’t find somewhere else—it just offered it in the clearest, most supportive way. And let’s not forget that it’s a cook book! It’s full of knowledge, history, and amazing recipes! I would certainly recommend this book to any who are seeking a healthier, happier diet.

I really like this book by Layne Lieberman. It is a wonderful resource for dining at home, at favorite restaurants or trying new places. She includes 50 delicious and nutritious recipes that are simple enough to accomplish for family and friends. I enjoyed the photos of places she has toured along with photos of the people she interviewed in her travels and research for this fabulous book. As a Registered Dietitian, she provided important information to me that I never knew about in maintaining good health. Her book is very encouraging and easy to follow. I certainly recommend it highly. Ms. Lieberman is an internationally recognized nutrition expert and I follow her website.

Pick up this powerhouse read and direct your health in a positive direction
Layne Lieberman’s book Beyond The Mediterranean Diet is very well explained, scientifically based and flexible nutrition plan which includes vegetarian and ethnic options. Even if you choose to not follow recipes, you will be left understanding the dangers of other diets. Is intriguing to read because it provides a lot of history about the Mediterranean and Swiss way of eating. I enjoyed the pictures and I have tried a few of the recipes, and I love the taste. If you’re looking to start a whole new meal regimen with outstanding health results, pick up this powerhouse read and direct your health in a positive direction. In closing, I must also disclose that I am a chef and restaurants owner and I have cooked for 30 years.

I heard your presentation and bought your book at Changes in Latitude and love it. I was just planning a lunch and am going to make a recipe or two from your book.
I have a recollection of a French recipe from many years ago that I think was a meringue shell with a chestnut paste in the shell and maybe whipped cream or ice cream on top. Would you have a recipe for a dessert that is like it or similar to it? I thought it was called Meringue Glace, but the recipes for Meringue Glace that I have found on the internet are not the same as I remember it.
After your talk at CIL, we talked about the movie A Year in Burgundy that can be streamed on Netflix. Did you have a chance to see it?

I love this book a lot…It tells you a lot on how to dine out and how to cook at home and eat clean and healthy. Being a vegeterian its hard to find right amount of protein and clean eating, however, this book explains a lot on how to eat clean and eat right portions. Love it.

In her book, Beyond the Mediterranean Diet, Layne Lieberman shares the “European secrets” for health in an easy to read book with beautiful photography. Ms. Lieberman obviously conducted first hand research as she explored the diets and foods of the Swiss, Italian and French and compared it to the American style of eating. The book offers a wealth of nutrition information with practical suggestions, including recipes, for the reader to incorporate a healthy European style of eating. In an age where we are inundated with a new fad diet almost weekly, Beyond the Mediterranean Diet, is a refreshing change. Layne Lieberman explores the diets of three countries – Switzerland, France and Italy – to explore the interconnection between the longevity rates enjoyed in these countries with their diets and healthier lifestyles all in an effort to teach us about lowering high cholesterol rates and obesity that plague us in the United States. Not only do we value the “Big Meal” concept in the US but our food is laden with chemicals, additives and preservatives that have not been properly tested by the Food and Drug Administration.
Layne’s personal experience living in Switzerland coupled with the bright and colorful photographs throughout the book make it an enjoyable read akin to a memoir and not just a “diet book” full of dos and don’ts. Yes, Layne gives guidance and direction and her history in the food industry gives her particular insight into what is really in the food we eat, even the food packaged and labeled as “healthy”.
Layne gives us compelling reasons for why we need to change what we eat, how we eat, and most importantly, our attitude towards food. Layne goes further and provides us with suggestions for customizing a diet that is healthy as well as dealing with the emotional landmines and pitfalls that may pop up along the way. There are times when I question how we might stick to this and then she reminds of the benefits and I feel inspired again. She also realizes that we are human with emotional ties to food. I would highly recommend this book to anyone who wants to learn more about what we ingest on a daily basis and living a healthier life.

My weight gain started like 7 years ago after finishing my college and starting a job. My job took over my life and I didn't have any time to go to gym and didn't have proper guidance for a diet that will maintain my body. Within a year I went from size 0 to 6 and from 110lbs to 135lbs. It didn't just stop there though, about 3 years ago I started infertility treatment. I gained more weight after all the hormone treatments and went to a size 8 and was up to 147lbs. I felt like I was trapped in my own body and couldn't do anything about it. Then I joined gym and hired a personal trainer and I lost like 8-9lbs and then I stopped losing weight, I guess cause I didn't have proper nutrition I needed. So I stopped going to gym and I stayed at 137lbs. After few months I started noticing that I was out of breath all the time, feeling lazy and sluggish most of the time. I can say there were times I hated to look at myself in the mirror. None of my clothes fit me and I felt ugly. I tried so many diet plans and felt like I was starving myself and didn't like the taste of anything I ate. Also, being Indian most of the diet plans out there don't have any guidance on Indian ethnic foods, so basically you just do the guesswork and follow the plan. Which obviously never worked cause how do I know if I am calculating the nutrition right or not. About 6 months ago I went to get my regular checkup and came back borderline cholesterol and BMI above normal. For 30 years of age and no kids I felt like that's not good and I need to do something in order to be healthy for myself and my family.
Then one of my very good friend referred me to Layne Lieberman, RD. She has been amazing and a blessing to me who changed my life completely. Layne worked with me and made a special meal plan that was just for me based on my needs. She took my doctors reports and spent few days in making this plan. This plan basically helped me realize how unhealthy I was. She included Indian foods which I basically eat most of the time and taught me how to cook the same dishes healthy way. I also learned to read labels, make better food choices, food shopping. She made me understand that this is not a diet but its a way of lifestyle. I have lost about 18lbs and I'm down to size 2. This has not happened to me in past 7 years and this is huge for me. Thanks to Layne Lieberman. She stays on top of everything and follows up with me every month with scheduled phone calls and goes over everything to see how I am doing and follows up regularly. She is always available whenever I have any question to ask by emails and she gets back to me within few hours.
This will be my first New Years where my resolution won't have anything to do with my weight. I feel like registered dietitians have knowledge and are well trained to counsel individuals based on their needs. They are truly the food, nutrition and the diet experts! "

We even came to your home once in Quogue for a refresher. Since this time we have gone to the Joslin Center in Boston to learn Carb Counting. Now that Joe has Stage Kidney Disease we have been in search of a Renal Dietician and have had no real success. We even looked for you but could not find you. But it turns out there are alternatives and a good nutritionist can help people like me to make sense out of the confusing world healthy and not-so-healthy foods. My nutritionist, Layne Lieberman is an expert. She helped me to construct a diet that targeted my specific medical issues, rather than a one size fits all diet that you can find on the internet. She helped me to understand why certain foods are important for me, and which foods are not as good as they are cracked up to be. She helped to break down my diet into recipes and shopping lists, so I can be successful on my own.
I've lost 10 pounds in the first two months of my new diet. I haven't had beef, butter and high-fat cheese in two months. “Truly a trip of a lifetime” Puglia 2023
When I was doing the survey it was hard for me to pick something I would change. It was the hardest part of the survey to answer. I really enjoyed every member of the group and really thought the group was a good mix of very interesting people. One of my favorite parts of the program was meeting other dietitian and networking. I learned so much about what other dietitian were doing in other parts of the United States. So often we work in our own bubbles. I think having 16 people was a great number. I really hope to go on another trip with World RD in the future and have told all of my co workers about the wonderful experience I had. I very much miss the Mediterranean weather. It has pretty much has rained non stop since I returned.

The "Puglia Culinary & Cultural Tour 2023: The Mediterranean Diet & Beyond” was a tour de force, well-planned and flawlessly executed. The sites visited were exceptional and outside the traditional tourist path. We gained a comprehensive understanding of the wheat grown in Puglia; as well as the production of the different types of flour and bread. We also have a better understanding of types of olive oil. The visit to a working dairy farm and cheese production was spectacular. The cheeses we ate were exceptional. We also visited a fish market and had an opportunity to see and smell the local seafood. We also had the opportunity to cook our own meals and learn about making pasta, focaccias and other delicacies. During the whole trip we had plenty of insightful discussions about the Mediterranean Diet.
My wife and I learned and enjoyed the trip; far beyond our expectations. I am ready for the next one.

The professionalism of Layne, Maria, the tour guides, chefs, bus driver and participants was exceptional. I appreciated the questions and conversations about the Mediterranean diet and nutrition. 5 STAR- More like 5 million. I learned more than I could’ve imagined on this trip in all categories - culinary, culture, life, and much more. Layne is a wealth of information in all things nutrition, I highly recommend reading her book before AND after the trip to fully immerse yourself! Maria had more information than a library regarding all things cultural and historical. She painted a beautiful picture of what life was like everywhere we went.

Staying at the Masseria was a real life fairytale. It had our entire group completely speechless. Staying here was an emotional experience and I hope to return one day. When I close my eyes, this is my happy place now!
Not to mention, this was the most beautiful breakfast spread I have ever seen in my life, and probably will ever see. All of the ingredients were as fresh as could be, nutritious, everything was very clean, and we were able to fuel up before a full day of exploring and learning!
This was also such a fun place to explore! I loved the little farm which was full of happy animals that will come up to greet you!
I already miss waking up to the sounds of the rooster and donkeys in the morning!
Puglia as a region was so perfect. I fell head over heels in love for Puglia. This is such a special place and I am so happy that I was able to do this trip to see and experience this lovely destination.
I learned so much from this area and in terms of the Mediterranean lifestyle experience here.
Layne knew this area and lifestyle like the back of her hand and prepped us well for the information that we then received from locals!
I learned so much about the Mediterranean lifestyle from everyone we came across throughout this trip.
It was also nice talking with Dr. Giuseppe about the biodiversity in this region.
Layne curated an extremely beautiful trip. This was so well organized, we were able to fit so much into a week that I felt we were there for a month (in the best way possible)! For how much we got in, everything went seamlessly and we made the most out of our time!
Maria, our guide, brought us grapes to try from her family’s farm which was so thoughtful and she went above and beyond to give us an educational and personal experience.
Nicola, our driver, may be the safest driver in Italy. Somehow he manages to maneuver our bus without getting honked once - which is just unheard (keep in mind just outside my window at the first hotel I think I saw a near accident every time I looked out the window).
Chiara was an amazing chef, provided us with detailed and helpful information, and she was very engaging and entertaining!
Chef Ana Maria was such a sweetheart and we cooked such a delicious meal in an ethereal setting. I will definitely be utilizing and sharing what I learned with my family and friends.
I definitely recommend coming in a day early because I ran into a speed bump in Rome and it sounds like others did as well - but it wasn’t an issue since I came early.
I enjoyed everything about the trip. The food, meals, cooking classes, and nutrition education. The people Layne took us to meet had authentic tips and information that had been passed down generation to generation. And Layne is a wealth of information and I felt like I was learning by simply standing next to her.
The destinations and the places we stayed left me absolutely speechless. This trip was curated beautifully and was such an enriching and special experience.
The people, everyone truly became la famiglia almost immediately. It almost felt like a reunion rather than an introduction. I have made connections that I cherish and will maintain forever.
I learned a wealth of new information from making delicious pasta from scratch, creating beautiful pasta of all shapes and sizes, paired with informative nutritional details, to the rich culture and history of the area!
Layne has curated an incredibly special and enriching experience that she has so graciously shared with us!
She is a wealth of information & such a light! I learned so much from her and from the people and places she introduced us to. Our tour guide, Maria, was also fantastic. She painted a beautiful picture of the history that took place in the areas we explored.
It was so much fun being surrounded by people who are equally as passionate about nutrition, travel, culture, and food! I made some life-long connections here with people who inspire me very much.
Additionally, everything was planned to a T! It felt like we were there for a month because we were able to make the most of every moment. Travel & transport was seamless & easy with our driver, Nicola. He took great care of us and made sure we made it from place to place safe and sound!
This was a once in a lifetime and life changing experience for me that I will cherish forever. It has been so special bringing this experience home and sharing the stories and food with loved ones.

Layne Lieberman, WorldRD, developed (with much diligence, care and on-site research) an intense itinerary that allowed the attendees to get the most exposure to all that is Amalfi, Sorrento and Capri...something that one couldn't have done while venturing on their own in a six night stay! The fact we receive up to 35 CEUs for this adventure, is also a huge plus! Why no make your education delicious and entertaining!
From wine tasting and walking through the Pompeii ruins near Mt Vesuvius, to fine dining at a Michelin Star Restaurant, the days' events were packed full of cultural and culinary discovery! While observing farm fresh cheese making and preparing gourmet meals with chefs, Giovanii and Guispeppi, we discovered flavors of the past and present, combined!
The WINE was FLOWING and our personalities were glowing! Meeting so many amazing, talented, and sometimes, opinionated RDs, is always life-changing! Friendships were formed that will continue! That's always a plus while going on these adventures, as we start out strangers and end up friends! One suggestion of caution...watch your wine consumption, as it's easy to overindulge. But, what happens in Italy, stays in Italy, right ladies?!
Layne stayed true to her mission of nutrition education and healthy recipe modification, as she worked with the chefs in advance to develop and create recipes that were true to tradition, yet more nutrient dense. From less added sugar and salt, to the use of more ancient grains and carob flour in dishes and desserts, recipe modifications were used to create Mediterranean dishes that were true to tradition, but a healthier version.
Our 5-Star Relais hotel accommodations were much appreciated! Beautiful grounds, attentive staff, reliable drivers, delicious daily breakfasts, hands-on cooking classes, tour of the garden and orchard, and hikes to Sorrento kept us engaged!

Layne‘s Italian tours are simply amazing!
The Amalfi tour was a wonderful blend of hands-on kitchen immersion of food prepping and cooking, along with sightseeing and adventures!
When in the kitchen, we made ravioli, pizza, stuffed roasted peppers, squid and more! There was plenty of time out of the kitchen, too, and we were able to enjoy lunch at a winery and experience dining at a 5 Star Michelin restaurant.
My favorite activities were venturing to a local farm and experiencing a lively cheese making demonstration and taking a ferry to the island of Capri, to shop, eat, and soak up the sun.
In addition to the gastronomic adventures and culturally sensitive experiences, it provided a unique bonding experience for the group members and opportunities for lots (and lots) of laughter! Layne gets to know all the participants and even gives an Italian name that aligns with their personality. Everyone feels at home and welcome on her tours. I can’t wait to go on another tour with Layne!

"Puglia is a great destination to study the Mediterranean lifestyle. I greatly appreciated all of the culinary and cultural activities and gained immense knowledge from each activity.
There were so many enjoyable aspects of the trip! The cooking classes, dairy farm, grain mill, wineries and olive farms. Being from that region, our guides were able to provide additional commentary.
I now have a greater understanding of durum wheat and semolina flour, and their properties for making pasta and focaccia bread. Taste testing extra virgin olive oil and understanding the characteristics from a renowned expert in the field was a unique experience.
I cooked and ate cuttlefish for the first time!
The trip was an amazing experience that helped me better understand the land, culture, food and people of this region of southern Italy! Highly recommend!

Everything was healthy and delicious and has inspired me to make more changes at home. I made pasta as soon as I got home! Being able to make pasta and attend the cooking class makes learning more meaningful – a great experience!
I enjoyed most learning about the foods of this region and the history and culture of the people.
Learning about ancient grains was new for me. Of course making pasta and foccacia was great. I used to make my own pasta years ago and I am glad that I am returing back to it. Just learning about the Italian culture was very important to me- learning to slow down and enjoy things instead of rushing and eating, which is what Americans do.
I really can’t think of anything negative to say. I think I enjoyed the space at the masseria so much I would have preferred to stay there longer and relax.

I have never been to a UNESCO site before (I don’t think) and now I have been to two. I am in awe of all of the olive trees and the diverse landscapes of Puglia. I adore that the nonnas are making pasta in the streets and are faster than machines. I love that the tradition still lives and feel so humbled that I was able to not only witness the nonnas, but to experience Old Bari and be part of their local street life.
The cooking classes were exceptional and well organized! The chefs in Italy work magic in very small spaces! Each experience was wonderful and deeply appreciated! The foods that we sampled were heart healthy and many were high fiber, high nutrient content, etc. Delicious and healthy—my kind of meals.
Hands down staying at the masseria was my FAVORITE accommodation because of the charm and character- from the location and room décor to the food. The room space and décor were stunning, unique and comfortable. The spacious location was lovely, open and beautiful. The food here was my favorite for breakfast- the roasted tomatoes, cheese, prosciutto and hard-boiled eggs with capers. Simple and so very satisfying.
Our driver, Antonio was amazing! What can I say? Those ties!!!! Magnificent. Antonio has a pleasant personality and is very respectful and safe. Grazie for having the water available to us at all time—and for finding my wallet! Our guides, Antonella and Sandro were so knowledgeable and translated exceptionally well. Their English is so much better than my own.
The meticulous care that was taken to plan, prepare and present the meals was evident. The food quality was exceptional and fresh; and the flavors were crafted together so artfully. I was exposed to some combinations of foods that I had not thought of putting together. Especially the beans…the fava bean puree was one of my favorite dishes. I never got tired of homemade pasta and beans, and bread and cheeses, etc.
The transfers to and from the airport were convenient, quick and easy.
I enjoyed reviewing the itinerary prior to the trip and felt that it was detailed and thorough. I read it over several times before traveling to Italy and was excited and inspired every time I read it. I knew I was making the right decision in choosing to take this trip because the details of the trip were well thought out and laid out. Each venue was described meticulously. I know there were a few changes to the itinerary due to unforeseen circumstances and I felt that it was explained and handled professionally and meticulously as well.
Every part of the itinerary was fabulous, however I was so touched by being able to go to Lisa’s house! We had a private, intimate, local, homemade dinner shared with our group and I felt so lucky, privileged, grateful, humbled, etc! And even meeting Sandro’s wife and baby was very special to me. I truly felt like I was part of an amazing family in Puglia. I loved that everywhere we went in Puglia the people made us feel welcomed, appreciated, and valued. We were so blessed to have those experiences as most tourists never have the opportunities that we had.
My two top favorite foods were the ravioli with turnip greens on the last evening and the orecchiette with pumpkin, scamorza, and capicola at Altemura Winery. The potato flan and the pureed fava beans with chicory that Anna Maria made were delicious as well. The DiGesu bread was amazing! Best bread EVER! I enjoyed all of the gelato that I ate, too! Perhaps Sandro can teach us how to make gelato next time?
At Lisa’s House I loved the beans and greens and the eggplant.
In all honesty I enjoyed everything that I ate in Puglia. I am glad that I tasted everything and it was all so delicious. I think I am good on octopus now for awhile. I like it, but only in small amounts. I have tried it a few times, but prefer the squid and cuttlefish much better.
I learned how to make three easy homemade pasta shapes by hand. I had never made foccacia before and now know how to make that as well. I loved watching the mozzarella cheese being made so easily. You can tell that all of the chefs that taught us literally perform labors of love everyday. And they make it look so easy. I learned about the organic farming of wheat, cheese, olives, and wine production. I enjoyed learning about the production side of things and then putting it to the plate. This really made a difference to me as I always want to know where my food comes from, how it was produced and how it was prepared. I feel that all of our food in America is processed in a plant and packaged and eaten right out of the bag. It really is sad in so many ways... but understandable to a certain degree.
I learned about the towns like Trulli Houses/Alberobello, Ostuni, Lecce, Gallipoli. Visiting Matera and Alberobello (Trulli houses) the UNESCO sites was exciting as I had never been to an UNESCO site prior to this trip.
I learned about local foods grown in Puglia such as cherries, almonds, olives, Verdeca (white) and Susumaniello (red) grapes, figs, etc.
The entire experience was just amazing and inspiring in so many ways-both professionally and personally. I am curious as to how the trip would have been with more RD’s as opposed to being comprised mostly of significant others/friends. The week may have had a different vibe to it, but I truly adored everyone that went on the trip. They were a special group and so generous and welcoming as was everyone that we met in Puglia.
I am proud of our Puglia group! I loved Mama Mia, Ethelina, Katarina, Lucia, Roberto, Eduardo, etc. and I ADORE my Italian name of Fiore!!!! Giving us all Italian names was such a nice little touch on the trip."

The uniqueness of the area, the land, people, food and wine. I experienced tastes that I had not experienced before. I learned a new grape varietal and love it. "Sicily was a wonderful destination as part of the Mediterranean culture. It is unique in its food, people and culture.
I feel as the trip was planned very well. The days were filled with great experiences. Because our days were long, the scheduled dinners at times were changed.
Our driver Dominic was extremely professional, courteous and very kind. Our guide, Paolo was also the same as well as very knowledgeable, helpful and welcomed us as family.
The food experiences, which included the cooking classes and the “light” lunches provided at various places were excellent. I truly enjoy tasting the local cuisine and wine. The welcome and farewell dinner were very good. I did not care for the dinner we had across from the Duomo in Siracusa.
I arrived a day early and departed a day later. My transfers were excellent, waiting for me and when I arrived and took great care in making sure I was comfortable. Our transfer to the airport from Palermo was efficient.
The itinerary was clear. It gave a clear understanding of what our day looked like so that we could prepare ourselves.
I enjoyed meeting new professionals in my field and those who were not RDs added just as much to the group. I love Italy, its people, food, culture and hospitality. Besides the amazing food and wine, I really enjoyed visiting the ancient Roman ruins. They were spectacular!
I learned new information about the delicacies of Sicily such as how the soil of Mt. Etna creates a different taste of wine and olive oil rich in minerals. I also learned more about the region and how it highlights oranges, fennel, pomegranate and eggplant in its cuisine.
I think Sicily is equally enjoyable as Puglia. They are two very different areas that I experienced. I really enjoy the people, the food and wine and also how the non-RD participants brought a whole new flavor to the group.
I have now been to Italy with Layne Lieberman, WorldRD twice. First to Puglia and now to Sicily. The trip is a culinary immersion that provides me, as a Registered Dietitian Nutritionist, 31 continuing education credits for my certification. I now tell people that this is the only way I can get my credits completed! 😊 The experience of exploring food from the Mediterranean cuisine has been wonderful. These experiences give me nutritional knowledge, lifelong friendships, and a chance to see the world. I don’t think there is any better way to truly see, touch, feel, and taste food. I feel as if this helps me respect and appreciate food and to combine simple, fresh ingredients to cook. I’ve learned that by experiencing the culture of the people who live and work in the areas I have visited, my eyes and mind are open to a new perspective. This helps me give back to those who are seeking help in living a healthy life.

I just love being with other dietitians that are interested in food! Spending quality time with Layne and the repeat guests from Puglia was easily my favorite part of the trip!
Yes – I loved all the cooking classes. The simplicity of Sicilian food is remarkable. I feel confident I can easily create many of the dishes we prepared at home for my friends and family.
Puglia and Sicily were both awesome! Very different in the sense that both hotels for Sicily were in the heart of the city – while Puglia was much more rural.
I loved 99% of the trip. My least favorite part was the Roman palace. It was super interesting and the guide was extremely informative – but it was SO long. I know many people loved it. But for me – had I known what it would have entailed I might have ‘sat it out.’ Just not my cup of tea.
I loved, loved, loved the trip with Layne Lieberman, The World RD, to Sicily, Italy! The trip was carefully curated lending an both an informative and highly enjoyable trip. I have participated with other trips with The World RD and I can honestly say Layne NEVER disappoints. My advice to anyone on the fence – GO! You will have the BEST time. I promise!

Sicily is totally amazing. And the group was awesome.

The cooking session with the chocolate-making was awesome—the only suggestion is that we had more hands-on time instead of standing and listening for a few hours before lunch, which was amazing. There just could have been more hands on as participants to prepare the lunch like we did at the winery a few days prior.
It was so refreshing to see our drivers at the airport waiting for us after our 3-hour delay from Rome to Catania. High fives for that!
What stands out on top is the hands-on learning without being in a lecture—and the opportunity to ask questions in that environment. I truly appreciate this learning atmosphere for dietitians.
I learned more about southern Italy culture/Sicilian history and lifestyle and how it influences American culture. Our job as RDNs/nutrition experts is to take it back to our communities—the Mediteranean lifestyle—but to bring it back to realistic lifestyles for our communities.
As a member of the Academy, I appreciate the various styles of learning and obtaining continuing education. I personally love the hands-on learning of this trip. Who can obtain 30 hours of education with hands-on learning as a RDN?"

I loved that each day was a different activity. My favorites were pasta-making, olive oil tasting, wine tasting, mozzarella-making and everything we did at the masseria.

informative and FUN! It was no surprise the food was amazing. Puglia is the best kept secret in Southern Italy. I cannot recommend this trip enough. If you have the opportunity to go on this trip GO! I promise you will not be disappointed. I just wanted to take a moment to recognize Layne for all her hard work on this trip. Layne made herself readily available to us at all times. Our memories every step of the way are definitely keepers. The only stand out that I would have changed is dressing warmer on a couple of evenings. Yes, overall it was that good. I'm grateful to have been included. Based on my personal experience, and what I've heard from the other non-RD's, I think traveling with a mixed group is a winning formula -- at least for us non-RD's. Although we really benefited, I wouldn't want to deprive an RD from experiencing the same. Those who are educating need the Puglia encounter to get it right.
Based on the trip, I'm feeling challenged on 3 fronts:
1. to enjoy expanding my minimalist food prep and cooking skills;
2. to better source farm-to-table foods, and
3. to share usable elements of that balanced Puglia/Italian lifestyle.
The trip was definitely a working vacation. As such, I think the pace was necessary. I wouldn't want to have missed anything. To make more efficient use of my time I could have been more prepared. Research and communications on the fly were difficult given the poor Wi-Fi connections and busy schedule. An admonition and specific guidelines on preparedness might be helpful to the next group. I chose that word 'admonition' because impossibly busy as we tend to be before travel, I tend to have a care for admonitions (Attenzione!). Had I downloaded and opened the app, it might have been enough. Wish I studied it everyday for a couple weeks! The app is an awesome piece of work.

The cooking class at the Masseria was my all-time favorite part of the trip. It was so informative, fun, and set in such a beautiful location. I loved going to the dairy farm, but would have loved to see the outdoor location in the daylight instead of at night. The Masseria lodging was absolute gorgeous as well, and it was a highlight of the trip!
Overall, I would recommend this trip to my colleagues and anyone interested in learning about a healthy Mediterranean lifestyle and exploring this unique area of southern Italy.

Everyday I find myself remembering something about that week and I appreciate those memories very much.

My decision to go to Passion for Puglia trip was inspired by my wonderful daughter , Tina Carlucci, RD. I am so glad I decided to join her on this trip - it was an amazing experience.
This was one of the best gifts a mother can receive from a daughter. Spending one-on-one time with her and of course all the amazing ladies I had the pleasure of interacting with on this trip.
"Passion for Puglia " was a very well planned trip and the whole experience was amazing. For me the highlight was all the vegetarian dishes included in the Mediterranean diet. The simple ingredients used gave such tasty flavor to all the dishes. It inspired a lot of ideas to add to my own cooking adventures at home.
Overall I enjoyed this trip tremendously.
