Yogurt Zucchini Bread 
  • 1 cup organic spelt flour
  • 1 cup organic white whole wheat flour (or all purpose)
  • 1/2 cup organic sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 organic eggs
  • 1/2 cup plain fat free organic yogurt
  • 1/4 cup organic natural applesauce
  • 1/4 cup cold-pressed extra virgin olive oil
  • 1- medium local (organic) zucchini, shredded
  • Non-stick cooking spray


  1. Preheat oven to 350°F
  2. Combine dry ingredients together in a bowl
  3. In a stand mixer (or with a whisk), beat the eggs, yogurt, applesauce and oil until a pale yellow color
  4. Add in dry ingredients to mixer and beat until combined, a thick batter will form
  5. Fold in shredded zucchini
  6. Spray a 8-inch by 4-inch (holds a pound) loaf tin with cooking spray. Gently fold the batter into the pan and bake for 50 to 60 minutes, or until just firm in center
  7. Serves 12

Per serving: 155 calories, 5 .3 grams fat (less than a gram of saturated fat), 27 milligrams cholesterol, 123 milligrams sodium, 2.5 grams dietary fiber, 24.6 grams carbohydrates, 4.3 grams protein
