A Tad Sweet Ricotta-Yogurt Cheesecake Muffins with Mango<\/h2>\n

Did you know that fresh ricotta cheese is the main ingredient in southern Italian sweet delicacies like Italian cheesecake and cannolis? It’s much healthier than the artery clogging processed cream cheese that is typically used in American desserts. Fresh ricotta cheese (mixed with sugar and lemon zest) is also a treat served straight up with fresh fruit. Besides being delicious, this recipe is full of nutrients including calcium, vitamin C and protein!\u00a0<\/em><\/span><\/h4>\n

Choose organic ingredients when available:\u00a0<\/h3>\n
    \n
  • 3\u00a0large eggs<\/li>\n
  • \u00bc\u00a0cup\u00a0granulated sugar<\/li>\n
  • 1 (15-ounce)\u00a0container\u00a0whole or part-skim ricotta cheese\u00a0(avoid brands with gum additives)<\/li>\n
  • 1\u00a0cup\u00a0plain nonfat Greek yogurt<\/li>\n
  • 2\u00a0tablespoons\u00a0all-purpose flour<\/li>\n
  • 2\u00a0teaspoons\u00a0vanilla extract<\/li>\n
  • 2\u00a0teaspoons\u00a0lemon zest<\/li>\n
  • \u00bd\u00a0teaspoon\u00a0ground cardamom<\/li>\n
  • 2\u00a0small mangoes\u00a0peeled and diced<\/li>\n
  • nonstick cooking spray<\/li>\n<\/ul>\n\n\n\n

    Instructions:<\/h3>\n\n\n\n
      \n
    • Preheat oven to 350\u00b0. Place muffin liners into a standard 12-cavity muffin pan. Spray liners with nonstick cooking spray. You can opt to prepare muffin pan without liners and directly spray each cavity with nonstick cooking spray. Liners create a nicer aesthetic.<\/li>\n
    • Place ingredients in a food processor, and process until light and foamy, about 1 minute, stopping once to scrape sides with a spatula.<\/li>\n
    • Evenly distribute batter into prepared pan. Bake until muffins are golden and set, 45\u201360 minutes. If muffins brown before 45 minutes, loosely cover pan with foil to prevent overbrowning.<\/li>\n
    • Cool muffins for an hour; then remove from pan. If you are not using liners, place muffins on a paper towel to absorb extra moisture.<\/li>\n
    • When ready to serve, top each muffin with 1\u00bd tablespoons of mango. Muffins can be stored in a sealed container in refrigerator 3\u20134 days.<\/li>\n<\/ul>\n\n\n\n
