Recipe: Serves 6
- 1/2 cup whole wheat flour
- Salt and freshly ground pepper to taste
- 4 skinless, boneless chicken breasts, 6 ounces each
- 1 Tablespoon extra virgin olive oil (more if needed)
- 2 teaspoons dried thyme (or 2 Tablespoons fresh thyme)
- 1/4 cup yellow onion, chopped
- 1 clove garlic, minced
- 4 Tablespoons lemon juice
- 1/2 cup chicken broth
- Season flour with salt and pepper. Dredge chicken breasts. Discard excess flour and set chicken aside.
- Oven medium-high heat, heat 1 tablespoon olive oil in a large non-stick skillet. Add chicken and cook uncovered for 6 minutes or until golden brown.
- Turn chicken and cook an additional 6 minutes or until cooked through.
- Add the thyme, onion and garlic. Cook for one minute. Add lemon juice and broth.
- Serve with assorted veggies and roasted potatoes.
