Lemon Chicken

Recipe: Serves 6

  • 1/2 cup whole wheat flour
  • Salt and freshly ground pepper to taste
  • 4 skinless, boneless chicken breasts, 6 ounces each
  • 1 Tablespoon extra virgin olive oil (more if needed)
  • 2 teaspoons dried thyme (or 2 Tablespoons fresh thyme)
  • 1/4 cup yellow onion, chopped
  • 1 clove garlic, minced
  • 4 Tablespoons lemon juice
  • 1/2 cup chicken broth
  1. Season flour with salt and pepper. Dredge chicken breasts. Discard excess flour and set chicken aside.
  2. Oven medium-high heat, heat 1 tablespoon olive oil in a large non-stick skillet. Add chicken and cook uncovered for 6 minutes or until golden brown.
  3. Turn chicken and cook an additional 6 minutes or until cooked through.
  4. Add the thyme, onion and garlic. Cook for one minute. Add lemon juice and broth.
  5. Serve with assorted veggies and roasted potatoes.
