Easy Irish Soda Bread Rolls (Yeast-Free)

“It’s the luck of the Irish” and St. Patrick’s Day festivities that make you smile when spring rolls around. It’s the right time for yummy green goodies and my favorite—Irish soda bread!

Easy Irish Soda Bread Rolls (Yeast-Free), Makes 6 rolls

1-cup organic whole-wheat flour

1-cup organic all-purpose flour

1/2-teaspoon baking soda

1/2-teaspoon sea salt

1-cup low-fat buttermilk

2 teaspoons organic sugar

2 teaspoons fresh rosemary, chopped

Preheat oven to 375 degrees Fahrenheit.  Spray a non-stick baking sheet with cooking spray and set aside. In a large bowl, whisk the dry ingredients. In a medium bowl, whisk the wet ingredients. Add the wet ingredients into the dry ingredients and stir until dough forms.

On a clean work surface dusted with flour, pat out the dough until 1-inch thick. Cut the dough into six 2 1/2-inch rounds. Place each round on the non-stick baking sheet and bake for about 20 to 25 minutes or until done. Serve warm.
